Acadian Fricot (Chicken Stew)

Ingredients:

 

  • 3 boneless skinless chicken breasts
  • 2 cups diced onion
  • 2 medium potatoes, chopped
  • 4 large carrots, chopped
  • 1 tablespoon sodium-free chicken bouillon
  • 2 tablespoons extra virgin olive oil
  • 114g (4oz) all-purpose flour
  • 6 cups water
  • Herbes Salées (optional)
  • Salt and pepper to taste

 

Instructions:

 

  1. Cook chicken and shred. Set aside for now.
  2. While chicken is cooking, dice onion, chop carrots, and chop potatoes.
  3. Heat large pot on the stove and cook olive oil and onions over medium heat until onions are translucent. About 8 minutes.
  4. Add 57g (2oz) of flour, whisk, and cook 1 minute.
  5. Add water, bouillon, herbes salées, salt and pepper. Stir and taste. Adjust seasoning as necessary.
  6. Add onions, carrots, potatoes, and chicken. Lower heat to medium-low and simmer.
  7. In a separate small bowl, combine the remaining flour and enough water to form dough.
  8. Roll dough and cut into small rectangles. Add to stew, cook for 1 minute, and fold in gently.
  9. Continue to cook for 10 minutes longer.
  10. Enjoy!
