Chicken is a staple of any clean eating kitchen, here is another quick and healthy spin on the humble chicken. Great as a lunch or a dinner, baking the chicken saves time along with the fresh clean salad makes this recipe a winner anytime of year why not try it out this week!
Baked Chicken with Sweet Potato Salad
Serves : 1

- Pre-heat oven to 220c/425° F.
- Peel the sweet potato and cut into thin wedges and thinly slice the red onion.
- Line a baking tray with a baking sheet and toss the potatoes, onion, half the olive oil and a generous sprinkling of salt and pepper.
- Season the chicken with a little salt and pepper and brush
with the remaining olive oil. Place on the baking tray with the potato mixture and roast until tender, approximately 20 to 25 minutes.
Remove the chicken and potato mixture from the oven. Toss the warm potato mixture in a large bowl with the spinach, lime juice, and a little extra salt (if required).
Serve with the chicken.
10 mls extra virgin olive oil
1 sweet potato (approx 150g each)
150 g chicken breast fillets, skinless and boneless
1 pinch black pepper
40 g baby spinach leaves
1 pinch sea salt
0.25 red onions, small (approx 60g each)
10 mls lime juice, bottled
