Healthy Vietnamese Rice Paper Rolls

Vietnamese rice paper rolls

Serves 2

Ingredients

1 large chicken breast 300grams cut into strips

1 carrot shredded or cut into strips

1 medium size cucumbersherred or cut into strips

1 small packet 100 grams of vericcilli rice noodles

8 rice paper wraps

1 teaspoon oil for cooking

1 teaspoon mixed spice

Salt to season

 

Method

Soak the noodles in a bowl of bowling hot water until soft

Shred the cucumber and carrot and place into a serving bowl

In a pan add the oil and on high heat stir fry the chicken with the mixed spice until cooked (season with salt) set aside.

Once the noodles are soft to bite, drain and strain the serve in a bowl

All the prep is done now time for the assembly of the rice paper wraps

 

Assembly

Put a small dish big enough to soak the rice paper wrap flat, fill with hot water

Place the wrap in the water for a few seconds not too long just enough so its totally wet.

Remove from the water and let the excess water drip off

Next place flat on a plate and add the ingredients in layers in the middle of the wrap

Finish by rolling the end over then folding in the side then roll in to a cylinder shape

    I love these rice paper rolls. I could eat them every day for breakfast lunch and dinner 🙂

    Love making these. Not only are they healthy, they’re a quick meal and can easily be prepared ahead of time. Then assembled when ready to eat

      I sometime make them in bulk for partys etc, such a crowd favourite
