Chicken Parma

  • 454 g. (1 lb.) boneless skinless chicken breast
  • Garlic powder
  • Salt and pepper to taste
  • 2 medium vine tomatoes, sliced
  • 1 large egg
  • 4 slices provolone cheese (14 g. (1/2 oz.) per slice)
  • 1/2 cup Panko bread crumbs
  • fresh oregano (optional)


Baked Chips

  • 454 g. (1 lb.) russet potatoes
  • 1 tablespoon extra virgin olive oil
  • salt an pepper to taste



  • 340 g. (12 oz.) chopped lettuce
  • 1 cup cucumbers, diced
  • 1 tomato, diced
  • 57 g. (2 oz.) shallot or red onion, finely sliced
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon extra virgin olive oil



  1. Preheat oven to 215 C (425 F).
  2. To prepare the baked chips:
    1. Slice potatoes in half, and then into strips. Rinse and pat dry.
    2. Toss potatoes in a large bowl with 2 tablespoons of olive oil and season with salt and pepper.
    3. Arrange in one layer on a baking sheet lined with foil.
    4. Bake for 20-30 minutes.
  3. To prepare the chicken:
    1. Slice chicken breasts in half, into thin, 113-gram (4-ounce) portions.
    2. In a small bowl, prepare and egg wash by beating one egg and one tablespoon of water with a fork.
    3. Pour Panko crumbs into a separate, large shallow dish.
    4. Season chicken with garlic powder, salt, and pepper.
    5. Brush chicken on all sides with egg wash. Dip chicken in Panko crumbs and coat on all sides.
    6. Set chicken on wire rack that is placed on a baking sheet.
    7. Place chicken in oven (with the potatoes), and bake for 20-30 minutes. Start checking your chicken for doneness around the 15-minute mark. Juices should run clear and the internal temperature should read 165 degrees Fahrenheit.
    8. Remove from oven. Top each breast with two slices of tomato, a few leaves of oregano (optional), and a slice of cheese.
    9. Turn oven temperature to ‘broil’ or 260C (500F). (You should remove potatoes at this point.)
    10. Place assembled Chicken Parma into oven and broil for 1-3 minutes, or until cheese is melted and just starting to turn golden brown. Check every 30 seconds or so to avoid burning.
  4. To prepare the salad:
    1. Combine all ingredients in large bowl.
  5. Serve potatoes, Chicken Parma, and salad together. Enjoy!

Pork Tenderloin

With blackberry balsamic glaze and root vegetables


Serves: 8

Prep Time: 10 minutes

Cook Time: 8 hours

Carbohydrates: 20 g.

  • 1 kg. (2 lb.) pork tenderloin
  • 550 g. (19 oz.) turnip
  • 250 g. (9 oz.) beets
  • 550 g. (19 oz.) carrots


  • 284 g. (10 oz.) frozen blackberries
  • 1 T. brown sugar
  • 1 T. balsamic vinegar




  1. To make glaze
    1. Combine blackberries and brown sugar in a small saucepan and heat over medium heat, stirring often, until berries break down and begin to bubble.
    2. Add balsamic vinegar and bring to a boil. Reduce heat to medium-low and simmer until glaze has reduced by half, stirring often. Remove from heat.
  2. To prepare the meat and vegetables
    1. Add chopped vegetables to a large slow cooker.
    2. Brush pork with glaze and add to slow cooker
    3. Cook on low for 8 hours. Serve and enjoy!
